Role Summary

As the Food Production and Service Manager you will be responsible for the daily operations of the restaurant; ensuring that the Food and Beverage outlets achieve projected sales and profit levels through the implementation, management and enforcement of company policies, procedures, programs and performance standards. Ensuring execution of all employee duties to guarantee a luxury guest experience and a quality work environment.

• Ensures that all menu items are prepared, portioned, and presented properly in a clean, safe, and sanitary manner, according to all established procedures, performance standards, and local health department regulations.

• Assist with and oversees food preparation and the overall presentation of food with primary responsibility Pepe’s Café.

• Ensures that inventory levels for both food and non-food items are properly maintained in accordance with company policy through correct ordering procedures and efficient usage.

• Ensures accurate financial data to include: restaurant supplies, inventories, food cost, payroll/productivity, and operating expenses.

• Manage budgets and payroll records.

• Inspect supplies, equipment, and work areas; coordinate cleaning and maintenance services for the equipment and facility in order to comply with health and sanitary regulations.

• Orders food and beverages, equipment, and supplies.

• Manage the overall guest experience through guest engagement & direct guest feedback.

• Address complaints regarding food quality and service.

• Anticipates, identifies and corrects system breakdowns to achieve guest satisfaction.

• Establish standards for personnel performance and customer service.

Role Specific Knowledge and Skills

• Excellent knowledge of F&B service delivery standards.

• Excellent knowledge of food production standards.

• Excellent financial know-how: budgeting, inventory, par levels, sales.

• Highly competent in the use of computer systems, specifically;

• Point of Sale Systems, Inventory tracking and control, Microsoft Office software or equivalent.

• Strong leadership and management skills.

• Strong verbal and written communication skills.

• Strong planning, organisation and execution skills.

• High guest experience orientation.

• Detailed Oriented.


• Minimum of (5) five years’ experience in Food Service Management in a luxury or boutique resort/hotel or independent restaurant.

• Proven track record in food production services.

• Graduate of Hotel Training or Culinary School with academic or professional qualifications in Culinary Arts, Food and Beverage Management.

• Food Safety & Hygiene qualifications e.g. HACCP or OSHA ideal.
