TITLE: Executive Chef


REPORTS TO: Food & Beverage Manager

The Role: We are looking for a professional, dynamic and well experienced Executive Chef. The successful candidate will be responsible for overall food quality, presentation, menu development and waste prevention. The incumbent must be verse in Italian and International cuisine. Daily responsibilities include maintaining health standards, staff training, menu design and oversight of the culinary team. The successful candidate will employ their culinary and managerial skills to play a critical role in maintaining and enhancing our customers’ satisfaction.

What you will do:

• Establish, develop and maintain department goals, objectives, standards and budget.

• Establish, create, cost and maintain standard recipes, menus.

• Maintain cost percentage on par or below expected budget.

• Monitor and control all stock levels through international ordering.

• Implement and enforce all operating and control procedures to ensure that movement of foods into and within the kitchen is properly accounted for.

• Enforce internal control policy and procedures throughout the department, regarding purchasing, receiving and inventory control.

• Establish acceptable variances in cost and to explain variances beyond these acceptable levels to the Food & Beverage Manager.

• Ensure consistency, quality and portion and cost control.

• Plan staff levels and payroll costs in order to minimize cost whilst maintaining operational standards.

• Enforce HACCP Sanitation Standards.

• Create a motivating environment through constructive criticism and positive feedback.

• Maintain and ensure that a Five Star level of food preparation standard is adhere to for every workstation.

• Plan and manage menus for buffets, banquets and other special events.

What you must know:

• 3 or more years of multi-unit leadership experience (preferred)

• Experience with showmanship (chef’s table) (preferred)

• Small island experience (preferred)

• 5 or more years’ experience as an Executive Chef

• Understanding of various cooking methods, ingredients, equipment and procedures

• Excellent record of kitchen and staff management

• Accuracy and speed in handling emergency situations and providing solutions

• Familiar with industry’s best practices

• Working knowledge of various computer software programs (MS Office, restaurant management software, POS)

• BS degree in culinary arts or related certificate would be an advantage.
